A bright yellow wine with green highlights. It is complex and elegant. On the nose, citrus, white flowers, notes of bread and vanilla can be distinguished. On the palate, it is soft, dry and with a medium acidity. Round and balanced. On the palate, citrus and chilli can be distinguished. It has a very creamy finish.

- Fermented in stainless steel for an exceptional average duration of 120 to 130 days, at temperatures around 6ºC. The sake yeasts are added just after inoculation of the grapes. The wine rests on its lees in stainless steel tanks for 30 days.

Pascal Marty es el único enólogo no japonés en el mundo con acceso a estas levaduras con propiedades excepcionales: son más resistentes y permiten vinificar a temperaturas más bajas. Los viñedos están plantados a 10 kilómetros del Oceáno Pacífico. La proximidad al océano así como el efecto de la corriente fría de Humbolt y la ausencia de montañas en la región permiten que la brisa marina refresque los suelos.
