An elegant and complex wine, with a style very similar to the best white wines of Burgundy, France. As the grapes arrive at the winery, they are separated into batches from each vineyard for fermentation in French oak tanks and barrels selected by Charlie. Depending on the vintage, a varying portion will undergo malolactic fermentation. The length of time in the barrel depends on the maturation of each batch. Finally, the wine is blended, maintaining the distinctive layers of flavour and its balance in acidity.

Like the climate in which it is grown, Mer Soleil Chardonnay is a spectacular and artistic combination. Creamy and rich, this wine is balanced with lively acidity. Fermentation and aging take place in French barrels for 12-15 months, in a mix of new and used barrels to provide the right amount of oak. Only a portion of the wine undergoes malolactic fermentation to ensure firm acidity and a touch of butter. We also manually agitate the wine to provide a creamy texture.

Golden and sun-kissed, it opens with aromas reminiscent of layered lemon and peach, along with subtle toasted notes of freshly baked bread. The palate is full and fresh, with ripe flavors of fruit tree blossoms and hints of mango, balanced by vibrant natural acidity. Medium-full body, with a long, not heavy finish; its combination of oak, butter and fruit blend seamlessly and leave a harmonious, lingering impression.

Charlie Wagner II, 4th generation Napa Valley winemaker with roots dating back to 1906, is named after his late grandfather Charlie Wagner, founder of Caymus Vineyards. Charlie Jr. began specializing in Chardonnay production when he was just 17 years old. By 2004 he took over the production of Mer Soleil Winery. The winery's production is based on two styles of 100% Chardonnay wines.

Mer Soleil Chardonnay is a style of wine that is aged in French barrels and Mer Soleil SILVER, the second brand, is a wine fermented and aged in small natural cement tanks imported from France. Charlie Wagner Jr. continues to develop techniques that best suit the grape crops in the Santa Lucia Highlands appellation in Monterey County.
