Like the climate in which it is grown, Mer Soleil Chardonnay is a spectacular and artistic combination. Creamy and rich, this wine is balanced with lively acidity. Fermentation and aging take place in French barrels for 12-15 months, in a mix of new and used barrels to provide the right amount of oak. Only a portion of the wine undergoes malolactic fermentation to ensure firm acidity and a touch of butter. We also manually agitate the wine to provide a creamy texture.
Golden and sun-kissed, it opens with aromas reminiscent of layered lemon and peach, along with subtle toasted notes of freshly baked bread. The palate is full and fresh, with ripe flavors of fruit tree blossoms and hints of mango, balanced by vibrant natural acidity. Medium-full body, with a long, not heavy finish; its combination of oak, butter and fruit blend seamlessly and leave a harmonious, lingering impression.
