Casa Defrà Amarone della Valpolicella
| 97 Points | Vinum Wine Magazine |
| 98 Points | Lucca Maroni |
It is distinguished by the appassimento method, where the grapes are dried for at least 120 days before fermentation, resulting in a velvety, elegant wine with excellent aging potential. It differs from Ripasso in that the latter is made by passing young wine over the skins of Amarone grapes, while Amarone is made directly from the dried grapes. It must age for a minimum of two years in barrels (often Slavonian oak) and a further four years in the bottle.

Tips for Enjoying ItPairing
Wine is for everyone...
Amarone della Valpolicella is a powerful, full-bodied wine with nutty notes, ideal for pairing with rich red meats in stews, mature cheeses like Parmesan and Gorgonzola, and truffle dishes. Its complex structure also harmonizes with traditional Veneto dishes such as risotto all’amarone and ossobuco.
