It is distinguished by the appassimento method, where the grapes are dried for at least 120 days before fermentation, resulting in a velvety, elegant wine with excellent aging potential. It differs from Ripasso in that the latter is made by passing young wine over the skins of Amarone grapes, while Amarone is made directly from the dried grapes.
